Quarantine Eating: What have you perfected or grown tired of?

We've all been quarantining, hopefully, and I don't know about you but it's forced me to cook more than usual. Which is saying a lot because I cook often. I don't only bake either, if you follow my instagram feed, @chicfoodist, I also love to cook. I've shared this recipe before and it's simply amazing, to be short and frank. My quarantine perfection, Avocado Toast. Drop your perfections or tired of story and pics. If you decide to give this recipe a try, upload your pics and tell me how you like it.


Recipe: Sourdough baguette, 2 eggs, 1 tomato, 1 avocado (1/2 for each slice of bread), arugula, parmesan cheese (grated), red pepper flakes, capers, salt & pepper.


Preparation:

1.Cut sourdough baguette into size of toast you desire.

2.Cut the section in half and lightly toast.

3.Place cold water in a small pot and bring to a simmer.

4.Once the water is at a simmer, turn down until no bubbles form in water or a bare simmer.

5.Crack egg into a small bowl or ladle and gently place in water to poach. Leave egg in 5-6 minutes. Remove and place on a plate with a paper towel.

6.Cut tomato into thin slices, 2-3 per slice of toast.

7.Cut avocado, remove seed and mash to a chunky to smooth texture, whichever you prefer. Salt and pepper to your desire.

8.Spread avocado over both slices of toast, placing arugula over top, 2-3 slices of tomato next and gently place egg over top of tomatoes.

9.Sprinkle top of toast/egg with grated parmesan cheese, red pepper flakes and capers (sea salt if desired).
